Ingredients

  • 3 tbsps. olive oil
  • 3 assorted peppers, seeded, sliced thin
  • 1 hot banana pepper, seeded and sliced thin
  • 2 firm tomatoes sliced thin
  • 3 cloves garlic chopped fine
  • 1 bay leaf
  • 1/2 c catsup
  • 1lb medium to large shrimp, shelled and deveined
  • water for desired consistency
  • 1 cup brown rice
  • 2 cups water to cook rice

    Heat oil in wide bottomed pan to smoking point

    Saute shrimp until translucency is gone

    Remove shrimp, set aside.

    Add mor oil if needed, saute remaining ingredients except liquids.

    When vegetables are soft add liquids, catsup and water as desired.

    Stir to incorporate all ingredients.

    Add shrimp.

    Cook rice according to directions on package or 2 to 1 Two cups water and one cup rice.

    Cook about twenty minutes. Turn rice onto large platter, pour shrimp creole over top. Remove bay leaf and serve.
