Ingredients
- 3 tbsps. olive oil
- 3 assorted peppers, seeded, sliced thin
- 1 hot banana pepper, seeded and sliced thin
- 2 firm tomatoes sliced thin
- 3 cloves garlic chopped fine
- 1 bay leaf
- 1/2 c catsup
- 1lb medium to large shrimp, shelled and deveined
- water for desired consistency
- 1 cup brown rice
- 2 cups water to cook rice
Directions

1Heat oil in wide bottomed pan to smoking point

2Saute shrimp until translucency is gone

3Remove shrimp, set aside.

4Add mor oil if needed, saute remaining ingredients except liquids.

5When vegetables are soft add liquids, catsup and water as desired.

6Stir to incorporate all ingredients.

7Add shrimp.

9Cook rice according to directions on package or 2 to 1 Two cups water and one cup rice.

10Cook about twenty minutes. Turn rice onto large platter, pour shrimp creole over top. Remove bay leaf and serve.
