Shrimp Curry

- 3 large onions, chopped
- 3 Tbsp. butter
- 1 bulb garlic
- 1 green pepper
- 2 to 3 large ripe tomatoes
- 1 Tbsp. curry powder
- 1 1/2 cans evaporated milk
- 3 to 4 lb. cooked shrimp
- 1 1/2 c. mayonnaise
- hot cooked rice
Directions

1Saute onions in butter along with minced garlic and chopped green pepper.

2Add tomatoes (chopped in 1/2-inch cubes).

3Add curry powder and milk.

4Simmer until mixture thickens, don't boil. Add shrimp and mayonnaise.

5Heat thoroughly.

6Serve over cooked rice.
