Shrimp Curry

  • 3 large onions, chopped
  • 3 Tbsp. butter
  • 1 bulb garlic
  • 1 green pepper
  • 2 to 3 large ripe tomatoes
  • 1 Tbsp. curry powder
  • 1 1/2 cans evaporated milk
  • 3 to 4 lb. cooked shrimp
  • 1 1/2 c. mayonnaise
  • hot cooked rice

Directions

    Saute onions in butter along with minced garlic and chopped green pepper.

    Add tomatoes (chopped in 1/2-inch cubes).

    Add curry powder and milk.

    Simmer until mixture thickens, don't boil. Add shrimp and mayonnaise.

    Heat thoroughly.

    Serve over cooked rice.
