  • 1 1/2 lb. fresh shrimp
  • 6 Tbsp. butter
  • 6 Tbsp. flour
  • 1 1/2 tsp. finely chopped onion
  • 2 c. coconut milk
  • 1 1/4 tsp. salt
  • 2 tsp. curry powder
  • 2 tsp. chopped ginger root
  • 1 1/2 Tbsp. lemon juice
  • cooked rice

Directions

    Shell and devein shrimp.

    Melt butter in saucepan.

    Remove from heat; stir in flour and onion, blending until smooth.

    Return to heat.

    Add milk slowly.

    Bring to boil, stirring until thickened.

    Stir in coconut milk, salt, curry powder, ginger root, lemon juice and shrimp.

    Simmer, covered, for 30 minutes.

    Serve over rice.
