- 1 1/2 lb. fresh shrimp
- 6 Tbsp. butter
- 6 Tbsp. flour
- 1 1/2 tsp. finely chopped onion
- 2 c. coconut milk
- 1 1/4 tsp. salt
- 2 tsp. curry powder
- 2 tsp. chopped ginger root
- 1 1/2 Tbsp. lemon juice
- cooked rice
Directions

1Shell and devein shrimp.

2Melt butter in saucepan.

3Remove from heat; stir in flour and onion, blending until smooth.

4Return to heat.

5Add milk slowly.

6Bring to boil, stirring until thickened.

7Stir in coconut milk, salt, curry powder, ginger root, lemon juice and shrimp.

8Simmer, covered, for 30 minutes.

9Serve over rice.
