- 1 tablespoon vegetable oil
- 1 scallion (including tops)
- 1 12 tablespoons curry powder
- 1 cup coconut milk
- 1 cup chicken broth
- 2 cups sweet potatoes or 2 cups white potatoes
- 34 lb large shrimp, cleaned
- 2 teaspoons lime juice
- 1 cup green peas
- 2 tablespoons chopped fresh cilantro
Directions

1In skillet, heat oil until hot.

2Saute scallion, about 1 minute.

3Stir in curry.

4Whisk in coconut milk and broth; bring to a simmer.

5Add potatoes; cook, partially covered until tender, about 10 minutes.

6Add shrimp, lime juice, peas and chopped cilantro.

7Simmer until shrimp are opaque and cooked through, about 3 minutes.

8Serve with rice or whatever you desire.
