Ingredients

  • 1 tablespoon vegetable oil
  • 1 scallion (including tops)
  • 1 12 tablespoons curry powder
  • 1 cup coconut milk
  • 1 cup chicken broth
  • 2 cups sweet potatoes or 2 cups white potatoes
  • 34 lb large shrimp, cleaned
  • 2 teaspoons lime juice
  • 1 cup green peas
  • 2 tablespoons chopped fresh cilantro

    In skillet, heat oil until hot.

    Saute scallion, about 1 minute.

    Stir in curry.

    Whisk in coconut milk and broth; bring to a simmer.

    Add potatoes; cook, partially covered until tender, about 10 minutes.

    Add shrimp, lime juice, peas and chopped cilantro.

    Simmer until shrimp are opaque and cooked through, about 3 minutes.
