- 2 eggs
- 1 tsp. water
- 2 to 3 c. bread crumbs
- 1/4 tsp. crushed red pepper
- 1/4 tsp. black pepper
- 1/4 c. grated Parmesan cheese
- 1 tsp. finely chopped fresh parsley (optional)
- 6 colossal shrimp or 12 jumbo
- oil (for frying)
Directions

1Lightly beat eggs and water in one bowl.

2Combine bread crumbs, red pepper, black pepper, cheese and parsley in another bowl.

3Devein and butterfly shrimp.

4Dip shrimp in egg and then in bread crumbs.

5Repeat.

6Refrigerate 1/2 to 1 hour.
