- 1 Tbsp. butter
- 1/2 lb. fresh mushrooms, sliced
- 2 stalks celery, sliced
- 2 green onions, sliced
- 2 cloves garlic, minced
- 1 1/2 to 2 lb. shrimp, peeled and deveined
- 3 Tbsp. lemon juice
- 8 cherry tomatoes, halved
Directions

1Coat a large skillet with cooking spray. Add butter and place over medium-low heat. Add next 4 ingredients. Cover and cook 8 to 10 minutes until vegetables are just tender, stirring occasionally. Add shrimp and lemon juice. Cook, uncovered, over medium-high heat 4 to 5 minutes until shrimp are done.

2Stir in tomatoes and pepper to taste.

3Serve over vermicelli.
