Shrimp Etouffee

Ingredients
- 2 lb. fresh shrimp
- 1/4 lb. margarine
- 1 c. finely chopped onion
- 1/2 c. finely chopped celery
- 1/2 c. green pepper, chopped fine
- 4 cloves garlic, chopped fine
- 1 Tbsp. cornstarch
- seasoning to taste
Directions

1Split shrimp and season with salt, pepper and cayenne (be careful with the cayenne!); set aside.

2Melt margarine and add onion, celery, green pepper and garlic.

3Cook slowly until onion is wilted.

4Add shrimp and let simmer for 20 minutes.

5Dissolve cornstarch in water and add mixture.

6Cook another 15 minutes, stirring occasionally.

7Serve over cooked rice.
