Shrimp Etouffee

Ingredients

  • 1 medium onion, finely chopped
  • 2 green onions, finely chopped
  • 3 or 4 minced garlic cloves
  • 1/4 c. chopped celery
  • 1/2 c. butter or margarine
  • 2 Tbsp. flour
  • 2 1/2 c. water
  • 1 1/4 c. tomato juice
  • 1 Tbsp. Worcestershire
  • hot pepper sauce to taste
  • 1/2 tsp. salt
  • 1 lb. cleaned, raw shrimp

Directions

    In a large skillet, saute onions, garlic and celery until tender in butter.

    Add flour and cook and stir until lightly browned.

    Add water, tomato juice, Worcestershire sauce, pepper sauce and salt.

    Simmer, uncovered, stirring occasionally 25 minutes or until sauce is almost of desired consistency.

    Add shrimp and continue cooking 15 minutes.

    Serve with parsley rice. Serves 4 to 6.
