- 2 c. chopped, cooked shrimp
- 2 Tbsp. soy sauce
- 4 c. cooked rice
- 1/4 c. oil
- 2 eggs, lightly beaten
- 4 oz. can mushrooms
- 1 tsp. salt
- 1 tsp. pepper
- 1/2 c. scallions, chopped
Directions

1Fry shrimp in oil in a deep frying pan for 1 minute, stirring constantly.

2Add eggs, mushrooms, salt and pepper.

3Fry over medium heat for 5 minutes, stirring constantly.

4Add rice and soy sauce; fry for 5 minutes, stirring frequently.

5Mix with chopped scallions.
