- 1 Tbsp. vegetable oil
- 1 c. sliced fresh mushrooms
- 1/3 c. sliced green onions (including tops)
- 1 tsp. minced fresh ginger
- 1 egg, beaten
- 2 c. cooked rice, chilled
- 1 1/2 c. cooked shrimp, cut in small pieces
- 1 Tbsp. soy sauce
Directions

1In a large skillet or wok, heat oil over medium-high heat.

2Add mushrooms, onion and ginger; stir-fry for 1 minute.

3Push vegetables aside.

4Pour egg into skillet and scramble.

5Stir in rice and gently, separate grains.

6Add shrimp and soy sauce; stir until thoroughly heated.
