Shrimp Fried Rice

- 2 c. chopped cooked shrimp
- 1/2 c. chopped onions
- 1/2 c. chopped bell pepper
- 2 Tbsp. soy sauce
- 4 c. cooked rice
- 1/4 c. oil
- 4 oz. can mushrooms
- 1 tsp. salt
- black pepper to taste
Directions

1Saute onion and bell pepper in oil until soft.

2Add shrimp and stir.

3Add mushrooms, salt and pepper and fry over medium heat for 5 minutes, stirring constantly.

4Add rice and soy sauce and fry 5 minutes, stirring frequently.

5Diced, cooked chicken, pork or ham may be used instead of shrimp.

6One or all of these makes for a fantastic taste.
