Shrimp Gumbo

- 3/4 onion, chopped
- 1 c. bell pepper, chopped
- 1 garlic clove
- 2 tsp. oil
- 2 (14 oz.) cans stewed tomatoes
- 1 can chicken broth
- 2 Tbsp. Creole seasoning
- 4 oz. egg noodles
- 3/4 lb. peeled, deveined shrimp
- 1/2 tsp. parsley
Directions

1Saute onion, pepper and garlic in oil over medium-high heat for 3 minutes.

2Stir in tomatoes, broth and Creole seasoning.

3Boil. Add noodles and lower heat to medium; simmer for 8 minutes.

4Stir in shrimp and parsley.

5Simmer 3 to 5 minutes or until shrimp are done.

6Serves 5 to 6.
