- 1/4 lb. oleo
- 1/2 c. chopped bell pepper
- 2 cloves garlic
- 1 can cream of mushroom soup
- 1/2 c. chopped parsley
- 1 lb. shrimp
- 1 1/2 c. chopped onion
- 1/2 c. chopped celery
- 1 can Ro-Tel tomatoes and chilies
- 2 c. cooked rice
- 1/2 c. chopped onion tops
- 4 slices bread, soak and squeeze out half of the water
Directions

1Saute vegetables in oleo.

2Add shrimp and tomatoes.

3Cook for 5 minutes.

4Add soup, bread, rice, parsley and onion tops.

5Pour into large, well-greased baking dish.

6Top with dry bread crumbs and dot with oleo.

7Bake at 450° for 30 minutes.
