Ingredients

  • 1/4 c. olive oil
  • 1 c. sliced onions
  • 2 or 3 cloves garlic
  • 4 or 5 peeled fresh tomatoes
  • 1 or 2 bay leaves
  • pinch of sugar
  • 1/4 c. water
  • 2 lb. uncooked shrimp, peeled and deveined
  • salt and pepper to taste
  • 8 oz. Feta cheese

Directions

    Saute onions in olive oil;

    add tomatoes that have been peeled,

    seeded, bay leaves, garlic and 2 teaspoons sugar or

    taste.

    Cook about

    1/2 hour; add shrimp, salt, pepper and water and cook about 5 minutes. Transfer to baking dish;

    sprinkle

    Feta cheese over shrimp and bake until cheese melts (approximately 10 minutes at 375°).
