- olive or salad oil
- 1 1/2 lb. shrimp, shelled and deveined
- 1 lb. sliced mushrooms
- 2 garlic cloves, minced
- 3 medium tomatoes, diced
- 2 Tbsp. lemon juice
- 3/4 tsp. salt
- 1/8 tsp. pepper
- 2 Tbsp. chopped parsley
- 3 c. hot, cooked rice
Directions

1Put 2 tablespoons oil in skillet.

2Heat on medium heat; cook shrimp, stirring until pink.

3Set aside.

4Add 1 tablespoon more to the same skillet.

5Add mushrooms and garlic; cook until mushrooms are tender, stirring occasionally.

6Add tomatoes, lemon juice, salt and pepper.

7Cook 3 minutes more.

8Return shrimp to skillet; heat.

9Sprinkle with parsley.

10Serve with rice.
