Shrimp Risotto With Peas

- 1 tsp olive oil
- 1 close minced garlic
- 1/2 large onion (diced)
- 1/2 cup arborio rice
- 1/4 tsp salt
- black pepper to taste
- 1 cup non-fat chicken stock
- 3 cups water
- 1/8 tsp paprika
- 2/3 cup frozen peas
- 1 1/2 ounces parmigiano-reggiano (grated)
- 8 ounces large shrimp
Directions

1Over medium heat, saute garlic and onion until translucent.

2Add the arborio rice and stir. Cook for 2 minutes and then add the salt and pepper.

3Add the chicken stock and enough water to cover the rice. Simmer on medium, partially covered for 15 minutes.

4Add the paprika, peas, parmigiano, and shrimp. Cook for 5 minutes more.
