Shrimp Salad Special

Ingredients

  • 1 c. water
  • 1 stalk celery with leaves, chopped
  • 2 Tbsp. salt
  • 2 Tbsp. vinegar
  • 2 Tbsp. mixed pickling spices or shrimp spice
  • 1 sprig parsley
  • 1 bay leaf
  • salt to taste
  • 1 1/2 lb. uncooked fresh or frozen shrimp, peeled and deveined
  • 1/4 c. tarragon vinegar
  • 1 c. celery
  • 3 hard-boiled eggs, cut in eighths
  • 1/4 c. mayonnaise
  • 1 Tbsp. chopped onion
  • 1 Tbsp. drained capers

Directions

    Combine the first 8 ingredients; bring to a boil.

    Add shrimp; cover and bring to boil.

    Lower heat; simmer gently until shrimp turn pink (about 5 minutes).

    Drain.

    Add tarragon vinegar; let stand about 1/2 hour.

    Drain thoroughly.

    Add remaining ingredients; toss lightly.

    Chill well.

    Serve in lettuce cups; top with mayonnaise.
