Shrimp "Touffee"

  • 1 stick butter or margarine
  • 1 (10 oz.) can Ro-Tel tomatoes with diced green chillies, drained
  • 1/2 c. green pepper, chopped
  • 1/2 c. green onions, chopped
  • 1 c. celery, chopped
  • 1 1/2 c. peeled raw shrimp
  • 1 can mushroom soup (undiluted)
  • 1 c. rice, cooked

Directions

    Combine butter/margarine, Ro-Tel tomatoes, green pepper, green onions and celery.

    Simmer for 30 minutes on medium heat.

    Add shrimp and mushroom soup.

    Simmer an additional 15 minutes on medium heat.

    Serve over cooked rice.
