- 1 large cucumber (remove seed and slice)
- 1 c. mushrooms
- 1 large pepper, chopped
- 1 lb. shrimp
- 1 large sliced summer squash
- 2 tsp. salt
- dash of pepper
- 1 tsp. garlic salt
- 1 tsp. sugar
- 1/4 c. vegetable oil
- 1/3 c. white wine
- 2 tsp. cornstarch
Directions

1Combine shrimp, vegetables, sugar and spices to hot vegetable oil.

2Saute 3 to 5 minutes.

3Drain any oil left in pan.

4Dissolve cornstarch and wine together.

5Add to vegetables.

6Bring to boil. Simmer 5 minutes.

7Serve with rice, if desired.

8Excellent for light lunch.
