Shrimp-Vegetable Dish

Ingredients

  • 1 large cucumber (remove seed and slice)
  • 1 c. mushrooms
  • 1 large pepper, chopped
  • 1 lb. shrimp
  • 1 large sliced summer squash
  • 2 tsp. salt
  • dash of pepper
  • 1 tsp. garlic salt
  • 1 tsp. sugar
  • 1/4 c. vegetable oil
  • 1/3 c. white wine
  • 2 tsp. cornstarch

Directions

    Combine shrimp, vegetables, sugar and spices to hot vegetable oil.

    Saute 3 to 5 minutes.

    Drain any oil left in pan.

    Dissolve cornstarch and wine together.

    Add to vegetables.

    Bring to boil. Simmer 5 minutes.

    Serve with rice, if desired.

    Excellent for light lunch.
