- 4 to 6 chicken breasts, halved or 8 to 10 thighs
- 8 slices bread, quartered
- 1 bunch American parsley, chopped
- 1 1/2 c. shredded Cheddar cheese
- 1 block butter or oleo, melted
- Hawaiian salt
- pepper
- garlic
Directions

1Rub chicken with Hawaiian salt, pepper and garlic.

2Set aside. In a food processor or blender, chop bread into crumbs on slice (4 pieces at a time).

3Empty crumbs into large mixing bowl.

4Add chopped parsley and shredded cheese.

5Mix together by hand.

6Dip chicken, 1 piece at a time, first in melted butter, then roll in crumb mixture until evenly coated.

7Place pieces in 9 x 12-inch roasting pan, lined with foil.

8Bake in 350° oven for 30 to 40 minutes, or until crumb coating is golden brown.
