- 1 1/2 cups vegetable oil
- 3 1/4 cups apples coarse chunks, peel
Directions

1Preheat oven to 325F (160C).

2In a large bowl, beat vegetable oil and sugar until thick and opaque.

3Add eggs one at a time, beating well after each addition.

4Sift together all-purpose flour, cloves, cinnamon, mace, baking soda and salt, then stir in whole wheat flour.

5Add to oil mixture and blend.

6Stir in walnuts, apple chunks and apple brandy.

7Stir to distribute pieces evenly.

8Pour into a greased 10 inch round cake pan.

9Bake 1 hour and 15 minutes or until a cake tester inserted in center comes out clean.

10Let cake rest for 10 minutes, then unmold and pour glaze over warm cake or cut cake and pour glaze over slices.
