- 1 1/2 Tbsp. canola oil
- 1 to 1 1/2 yellow squash, sliced thin
- 1 to 1 1/2 white potatoes, sliced thin
- 1 large onion, sliced thin
- salt and pepper to taste
Directions

1Put oil in large skillet with lid; layer onion, potatoes and squash (lightly salt and pepper each layer) in skillet.

2Cover with lid and simmer on stove top for 1 to 1 1/2 hours until tender.
