Simple Crispy Tempura Batter

  • 100 grams Cake flour
  • 5 grams Baking powder
  • 1 tbsp Sake
  • 1/2 tbsp Vinegar
  • 170 grams Cold water
  • 3 cubes Ice

Directions

    Add all the ingredients to a bowl and mix in a circular motion with cooking chopsticks.

    Put it in the fridge.

    Weigh out the ingredients and once mixed, put it in the fridge too.

    Chop up the tempura ingredients and put them in the fridge.

    While the oil is heating up, combine the ingredients with the ingredients and gently mix it.

    It's okay if the batter still has lumps at this point.
