Simple Eggplant with Cheese

  • 2 small Eggplants
  • 100 grams Melting cheese
  • 2 tbsp Ketchup (or pizza sauce)
  • 1 tbsp Dried parsley
  • 2 tbsp Olive oil

Directions

    Slice the eggplant into 1 cm thick rounds, and soak in water for a minimum of 15 minutes to remove any bitterness.

    Put 2 tablespoons of oil into a frying pan.

    Add the eggplants and stir-fry.

    When the eggplant is cooked, cover the pan and steam-fry over low heat.

    Once the eggplant becomes soft, align on a heatproof dish, and sprinkle on the ketchup.

    Top with heaps of melting cheese.

    Bake for 5 minutes in a 150C preheated oven.

    Once the cheese is nicely melted, it's done!

    You can certainly add the cheese and ketchup into the frying pan in Step 3.

    Cover the pan to steam-fry.
