Simple Mapo Tofu

Ingredients
- 3 blocks Firm tofu
- 200 grams Minced pork
- 2 clove Garlic
- 2 small pieces Fresh ginger
- 1 stalk Scallion
- 2 tbsp Miso
- 1 tsp Sugar
- 3 tsp Soy sauce
- 2 tbsp Mirin
- 2 tsp Oyster sauce
- 450 ml Hot water
- 2 tbsp Sesame oil
- 2 tsp Doubanjiang
- 1 and 1/2 tablespoon Katakuriko
- 3 tbsp Water
Directions

1Drain the tofu (I use a plastic bottle as weights).

2Mince the garlic, ginger and scallion.

3These are the seasoning ingredients.

4Dissolve all the ingredient in hot water.

5Heat sesame oil in a frying pan over low heat.

6Add the garlic, ginger and scallion and saute until aromatic.

7When the vegetables have wilted, increase the heat, then add the pork to the pan, stirring well until browned and crumbly.

8When the pork is cooked through, stir in the doubanjiang.

9Add the seasoning into the pork to mix and combine.

10Put the drained whole tofu into the pan!!

11Break up the tofu into bite sizes, stirring now and then, and bring to the boil.

12Once boiled, reduce the heat to medium and simmer for about 5 minutes.

13Stir in the katakuriko slurry, and let it come to a boil.
