- 2 cups chopped carrots
- 2 cups chopped potatoes
- 1 cup chopped celery
- 1 (2 -2 1/2 lb) beef roast
- 3 cups beef broth or 3 cups beef stock
Directions

1Prepare the vegetables.

2It may not be necessary to peel the potatoes depending on the variety you choose, but do peel the carrots (except baby carrots).

3Combine all ingredients in a 3-1/2 quart crockpot.

4Add salt and pepper to taste.

5Cover and cook on LO heat for 8 hours.
