  • 2 cups chopped carrots
  • 2 cups chopped potatoes
  • 1 cup chopped celery
  • 1 (2 -2 1/2 lb) beef roast
  • 3 cups beef broth or 3 cups beef stock

    Prepare the vegetables.

    It may not be necessary to peel the potatoes depending on the variety you choose, but do peel the carrots (except baby carrots).

    Combine all ingredients in a 3-1/2 quart crockpot.

    Add salt and pepper to taste.

    Cover and cook on LO heat for 8 hours.
