- 3 Tablespoons Oil
- 1 teaspoon Mustard Seeds (optional)
- 1 teaspoon Cumin Seeds
- 1 whole Large Yellow Onion
- 3 whole Russet Potatoes
- 1/2 teaspoons Turmeric
- 1 teaspoon Salt
- 1 teaspoon Chili Powder
Directions

1Heat oil in a kadai/frying pan and add the mustard seeds and jeera (cumin seeds).

2Once the mustard starts to sputter, add onions and potatoes along with turmeric and salt.

3Mix well and cook on medium heat until the potatoes are half-cooked.

4Then increase the heat to medium high and cook till the potatoes are fully cooked.

5You have to keep sauteing the potatoes at this stage often.

6You should be able to see the caramelization of onions and potatoes and the pieces will start having a golden brown color.

7Thats when you stop cooking.

8Add the chili powder just before you turn off the heat and enjoy.
