- 1 cup ricotta cheese
- 1 cup mozzarella cheese
- 14 cup parmesan cheese
- 1 egg
- 1 lb frozen spinach, thawed and drained (6 minutes in microwave, then squoze in a kitchen towel)
- 18 teaspoon ground nutmeg
- 1 (6 ounce) can tomato paste
- 1 14 cups chicken broth
- 1 cup mushroom, sliced
- 1 teaspoon italian seasoning
- manicotti
- extra mozzarella cheese (optional)
Directions

1Preheat oven to 350.

2Boil manicotti shells.

3Combine all cheese stuffing ingredients; stuff manicotti.

4Combine all sauce ingredients (or use a couple of cups of your favorite spaghetti sauce) and pour over stuffed manicottis.

5Cover with aluminum foil and bake for 30 minutes.

6Top with extra mozzerella, if desired, uncover and bake for 10 more minutes.
