Simple Strawberry Jam

  • 5 pints fresh strawberries, hulled
  • 6 cups granulated sugar
  • 6 -8 tablesppons fresh lemon juice

Directions

    Gently dump berries into a large bowl or sink of cold water to rinse, remove immediately into strainer and drain well.

    Pour into dutch oven, add sugar and mash well with potato masher until jusices begin to form.

    Place over low heat until sugar is melted, then raise heat and boil rapidly for 10 minutes, counting from the time mixture reaches full boil, stirring often.

    Remove from heat, adding in lemon juice.

    Pour into sterilized jars, seal and invert for 5 minutes, then set upright to cool.

    Label and store -- Enjoy.
