Sinful Pan-Fried Catfish

- 3 to 4 lb. fresh catfish
- 1/2 tsp. black pepper
- 1 tsp. salt
- lemon juice
- 1 c. cornmeal
- 1/4 c. flour
- canola oil or vegetable oil
Directions

1Wash catfish and if inside skin has dark areas, cut off. Sprinkle fish with generous amount of lemon juice.

2Salt and pepper and set aside.

3Mix remaining salt, pepper, cornmeal and flour. Pour enough oil for about 3-inches in bottom of 3-quart saucepan. Roll catfish in cornmeal mixture and drop into hot fat.

4Brown and drain on paper towels.

5Extra cornmeal mixture may be needed.

6If fish are too large, cut in half.
