Ingredients

  • 1 1/2 c. flour
  • 1 1/2 tsp. sugar
  • 1/2 tsp. salt
  • 1/2 c. salad oil
  • 2 Tbsp. cold milk
  • 1 c. grated carrots (about 2 medium)
  • 2 c. chopped dates
  • 2 c. raisins
  • 2 2/3 c. water
  • 1/2 c. butter (1 stick)
  • 2 tsp. each: ground cinnamon, cloves and nutmeg
  • 4 c. plain whole wheat or unbleached flour
  • 3 tsp. baking powder
  • 2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 c. chopped black walnuts, English walnuts or pecans
  • 2 tsp. vanilla flavoring

Directions

    Place the first 8 ingredients in a large pan and bring slowly to a boil for 5 minutes.

    Cool completely.

    Stir together the flour, baking powder, baking soda, salt and nuts.

    Add dry ingredients to wet and stir to blend.

    Stir in vanilla flavoring. Pour into greased and floured large Bundt pan.

    Bake at 350° for 1 hour.

    Frost with cream cheese and honey mixture, if desired.
