Skillet Corn Bread

  • 3/4 c. self-rising corn meal
  • 1 c. flour (self-rising)
  • 1/3 c. sugar
  • 3/4 tsp. salt
  • 1 c. milk
  • 1 egg, well beaten
  • 2 1/2 Tbsp. shortening

Directions

    Mix and sift together the corn meal, flour, sugar and salt. Heat oven to 425° and put medium size 9 or 10-inch iron skillet on hot burner with 1 1/2 tablespoons of shortening.

    When this gets hot, add 1 cup milk, 1 egg (well beaten) and 1 tablespoon shortening to corn meal mixture and pour into hot frying pan or skillet.

    Immediately put into hot oven and bake at 425° for 20 minutes.
