- 3/4 c. self-rising corn meal
- 1 c. flour (self-rising)
- 1/3 c. sugar
- 3/4 tsp. salt
- 1 c. milk
- 1 egg, well beaten
- 2 1/2 Tbsp. shortening
Directions

1Mix and sift together the corn meal, flour, sugar and salt. Heat oven to 425° and put medium size 9 or 10-inch iron skillet on hot burner with 1 1/2 tablespoons of shortening.

2When this gets hot, add 1 cup milk, 1 egg (well beaten) and 1 tablespoon shortening to corn meal mixture and pour into hot frying pan or skillet.

3Immediately put into hot oven and bake at 425° for 20 minutes.
