- 1/2 c. unsifted all-purpose flour
- 2 Tbsp. sugar
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/4 tsp. salt
- 1/4 tsp. ground red pepper
- 1 1/4 c. buttermilk
- 2 large eggs
- 1/4 c. chopped green onions
- 1/2 c. fresh or thawed corn
- 1/4 c. chopped, seeded, mild, green chilies
- 1 fresh jalapeno pepper, seeded and chopped
Directions

1In 9-inch cast-iron skillet, cook bacon, over medium-low heat, until crisp.

2Remove bacon; drain on paper towel.

3Crumble and reserve.

4In cup, reserve 2 tablespoons of bacon fat.

5Discard remaining fat.
