- 1 1/2 c. cornmeal
- 2 1/2 tsp. baking powder
- 2 eggs, beaten
- 6 Tbsp. shortening
- 3/4 c. all-purpose flour
- 1 tsp. salt
- 1 1/2 c. milk
Directions

1Combine cornmeal, flour, salt and baking powder.

2Combine beaten eggs and milk.

3Stir into cornmeal mixture.

4Mix well.

5Put shortening into a 10-inch skillet and heat.

6As soon as shortening is very hot, coat side of skillet with oil.

7Add remaining shortening to cornbread mixture.

8Spoon mixture into hot skillet and bake for about 20 minutes or until golden brown.
