- 6 slices bacon
- 3 c. frozen hash browns
- onion and green peppers
- 1 c. shredded Monterey Jack cheese
- 4 eggs

1In a 10-inch skillet, cook bacon until crisp; drain.

2Reserve 2 tablespoons drippings in skillet; set bacon aside.

3Cook frozen hash browns with the onion and green peppers until golden brown. Crumble 2 slices of bacon; stir into potatoes.

4Sprinkle shredded cheese on top of potatoes.

5Place remaining 4 slices of bacon in a crisscross atop cheese.

6Carefully bread 1 egg into each triangle formed by bacon.

8Cook over medium heat about 6 minutes or until eggs are set.
