- 2 Tbsp. salad oil
- 1 c. chopped green pepper
- 1/2 c. chopped onion
- 1 c. (4 oz.) diced cooked ham
- 1 can (8 oz.) tomatoes, drained and chopped
- 6 eggs
- 1/2 tsp. salt
- 1/8 tsp. pepper
Directions

1In large skillet (preferably nonstick), melt butter or margarine with oil.

2Saute pepper and onion over medium-low heat 10 minutes or until very tender.

3Stir in ham and tomatoes; cook over medium heat until liquid evaporates, about 6 to 7 minutes.
