  • 2 Tbsp. vegetable oil
  • 2 c. Aunt Jemima self-rising corn meal mix
  • 2 Tbsp. sugar (optional)
  • 1 1/2 c. buttermilk
  • 1 egg, beaten
  • 1/2 stick butter

Directions

    Heat oven to 425°. Put vegetable oil in 10-inch skillet. Heat in oven for 3 minutes; tilt skillet to coat bottom evenly. Combine corn meal, melted butter, sugar, buttermilk and egg. Mix well. Pour into hot skillet; bake 25 to 30 minutes.
