- 1 leftover ham bone or bone-in piece ham steak
- 6 small boiling potatoes, cleaned, peeled and quartered
- 2 lb. fresh string beans
- salt, freshly ground black pepper and hot sauce to taste
- pinch of brown sugar (optional)
Directions

1Place the ham bone or piece of ham steak in a heavy saucepan or Dutch oven with water to cover and bring to a boil.

2Top and tail the string beans; cut them to 2-inch lengths.

3Add the beans to the boiling ham bone along with the remaining ingredients. Lower to a simmer and cook for 1 hour.
