Slow Cooker Boiled Dinner

  • 3 Celery sticks cut into 3 inch pieces
  • 3 Carrots peeled and cut into 3 inch pieces and halved
  • 1 Onion cut into 1 inch wedges
  • 1/2 lb Of russet potatoes peeled and cubed
  • 6 Sprigs thyme
  • 1 Corn beef brisket ( about 3 pounds )
  • 1 tbsp Pickling spice ( can use packet the brisket comes with, I used my own )
  • 1/2 Cabbage sliced
  • 6 cup Water

Directions

    Place corn beef brisket into slow cooker fat side up and add about 6 cups of water till it's covered.

    Add in vegetables, potatoes, thyme sprigs, and pickling spice.

    ( I cooked this on high for 6 hours.

    Can also cook on low for 8 hours )

    About 20 minutes before serving take a large pot with water at a medium boil add your cabbage, after about 20 minutes cabbage will be fully boiled.

    Take the meat out of the slow cooker and cut.

    Using a draining spoon take out the rest of the vegetables and potatoes, same for the cabbage and serve!
