- 4 large potatoes, baked
- 1/2 c. shredded Cheddar cheese
- 1 Tbsp. butter
- salt and pepper
Directions

1After baking, cut potatoes in half lengthwise.

2Allow to cool for a few minutes.

3In a medium bowl, place cheese, butter and a dash of salt and pepper.

4Using a spoon, scoop out the potato half, leaving a thin layer around the inside of the skins.

5Mix this with cheese mixture and fill potato skins, placing them in a dish that will keep them upright.

6Return potatoes to oven for a few minutes.

7Sprinkle with extra cheese, if desired.
