Smoked Chicken Breast

  • 1 tablespoon light brown sugar
  • 1 teaspoon salt
  • Two 10-ounce whole boneless chicken breasts with skin
  • Strong Tea-Smoking Mixture
  • Spicy Remoulade Sauce or sweet-and-hot mustard, for serving

Directions

    In a small bowl, combine the brown sugar and salt.

    Put the chicken breasts in a large shallow dish and rub them on both sides with the sugar mixture.

    Cover and refrigerate overnight.

    Smoke the chicken according to the Basic Wok-Smoking Method until golden brown and just cooked through, about 30 minutes.

    Let the chicken rest for 5 minutes before slicing.
