Smoked Devilled Eggs

  • 12 whole Hardboiled Eggs, Smoked
  • 1/2 cups Mayonnaise
  • 1 whole Medium Shallot, Minced
  • 4 teaspoons Dijon Mustard
  • 2 Tablespoons Diced Chives
  • 8 slices Hot Pickles, Plus A Little Brine, Diced

Directions

    To smoke eggs, simply put peeled hardboiled eggs on the top grate of a smoker after any meat youre cooking is done.

    Smoke for 30-45 minutes, or until the eggs turn a gorgeous amber shade.

    Cut smoked eggs in half lengthwise, scoop the yolks into a small bowl and mash with a fork.

    Mix in the rest of the ingredients until thoroughly combined and creamy, then fill the egg whites with the mixture.

    These are also great with a little chipotle/adobo added to the yolks.
