  • 1 gal. cold water
  • 1 1/2 c. salt
  • 1 to 1 1/2 c. brown sugar
  • 2 to 3 Tbsp. crushed bay leaves
  • 2 Tbsp. ground pepper
  • 1/4 tsp. garlic powder
  • few drops red food coloring (if desired)

Directions

    Soak fish in cold brine 12 to 18 hours.

    Rinse fish; pat dry. Smoke fish 8 to 12 hours.
