Smoked Fish Spread

  • 1 lb. smoked fish (Sucker is great but any fish will work)
  • 6 ribs celery, finely chopped
  • 3 scallions or 1 small onion, finely chopped
  • 1 whole or 4 spears dill pickle, chopped
  • 1/4 c. mayonnaise or salad dressing

Directions

    Remove smoked fish flesh from bones and skin.

    Place in salad bowl and flake with fork.
  3. 3
    Add chopped vegetables and pickle. Stir in mayonnaise.

    Serve on party crackers as Hors D'Oeuvres or use to enhance salads.
