Ingredients

  • 1 lb. smoked haddock, remove skin and bones and break into bite-size pieces
  • 2 c. cooked rice
  • 1/2 lb. sliced mushrooms
  • 1 large onion, chopped
  • 1 large green pepper, chopped
  • 2 tomatoes, skinned and chopped
  • 1 c. frozen peas
  • 2 c. cheese sauce
  • 4 slices chopped crisp bacon (optional)

Directions

    Preheat oven to 350°.

    Fry until tender the mushrooms, onion, pepper, tomatoes and peas.

    Place haddock and rice in large casserole.

    Add fried vegetables and 2 cups cheese sauce.

    Mix well and bake, covered, for 45 minutes to 1 hour.

    Serves 6.
