Ingredients
- 1 lb. smoked haddock, remove skin and bones and break into bite-size pieces
- 2 c. cooked rice
- 1/2 lb. sliced mushrooms
- 1 large onion, chopped
- 1 large green pepper, chopped
- 2 tomatoes, skinned and chopped
- 1 c. frozen peas
- 2 c. cheese sauce
- 4 slices chopped crisp bacon (optional)
Directions

1Preheat oven to 350°.

2Fry until tender the mushrooms, onion, pepper, tomatoes and peas.

3Place haddock and rice in large casserole.

4Add fried vegetables and 2 cups cheese sauce.

5Mix well and bake, covered, for 45 minutes to 1 hour.

6Serves 6.
