Smoked Tomato Soup

- 3 lbs smoked tomatoes (Smoked Tomatoes)
- olive oil
- 1 onion, diced
- 10 garlic cloves, diced
- 1 cup red wine vinegar
- salt and pepper
- 2 cups chicken stock
- 1/4 cup chopped fresh sage
- 1/4 cup chopped fresh tarragon
Directions

1Heat a little oil in the bottom of your pot. Saute the onions until softened, about 10 minutes.

2Add the garlic and saute another 5 minutes.

3Add the red wine vinegar and simmer until reduced by half, about 10 minutes.

4Add the tomatoes and stock, and salt and pepper to taste, and simmer for about an hour, or until the tomatoes are starting to fall apart.

5Add the herbs and then puree in a food processor or using an immersion blender.
