Smooth Strawberry Pudding

  • 2 ounces unflavored gelatin (2 envelopes)
  • 12 cup cold water
  • 1 cup skim milk
  • 3 tablespoons honey
  • 1 12 teaspoons vanilla extract
  • 4 cups frozen unsweetened strawberries, thawed
  • 8 mint leaves (optional)

Directions

    In a medium size saucepan, sprinkle gelatin over water.

    Set aside for 5 minutes to soften.

    Add skim milk and honey and heat over medium heat, stirring constantly, until gelatin dissolves.

    Remove from heat and stir in vanilla.

    In a food processor, puree strawberries.

    Add gelatin mix and process until just blended.

    Divide among 8 dessert glasses and chill until set.
