- 4 slices fatback
- 2 to 3 lb. cut up fryer
- 1/3 c. flour
- 1 1/2 c. water
- 1 medium onion, chopped
- 1 tsp. salt
- 1/4 tsp. pepper
Directions

1Fry fatback in large frypan; remove.

2Add fryer; brown on all sides.

3Sprinkle with flour, coating and browning both sides. Stir in water slowly; sprinkle with onion, salt and pepper.

4Bring to a boil.

5Cover with tight fitting lid and cook on medium-low heat until gravy boils 10 minutes.

6Reduce to low heat; cover. Simmer 15 to 20 minutes or until chicken is done.
