Ingredients

  • 2 qt. jars green beans, drained
  • 1/2 c. onion, chopped
  • 2/3 c. salad oil
  • 1/2 c. vinegar
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 5 hard-boiled eggs, chopped
  • 1/3 c. mayonnaise
  • 1 tsp. mustard
  • 2 tsp. vinegar
  • 1/4 tsp. salt
  • 5 slices bacon, fried and crumbled

Directions

    Combine beans, onions, oil, 1/2 cup vinegar, 1/2 teaspoon salt and pepper.

    Toss well.

    Cover and chill overnight.

    Next day, drain beans.

    Mix remaining ingredients except bacon.

    Toss beans and bacon together.

    Make well in center of beans and fill with egg mixture.
