Snow Pudding

Ingredients

  • 1 pkg. Knox unflavored gelatine
  • 3 eggs, separated
  • 1/4 tsp. salt
  • 3 c. milk
  • 1/2 c. sugar
  • 1 tsp. vanilla extract

Directions

    Soak gelatine in milk for 5 minutes.

    Cook over low flame until gelatine is dissolved, then add sugar.

    Remove from heat and slowly add beaten egg yolks.

    Return to heat until you notice a slight thickening similar to cream.

    Remove from heat and stir in salt and vanilla.

    Add 3 stiffly beaten egg whites.

    Stir well and refrigerate.

    The pudding will separate into a layer of custard with a frothy (snowy) layer on top.
